A day spent in the hills of Shizuoka, hearing from the people who grow real wasabi how it comes to be. Walk terraces set in a running stream, then lunch made with wasabi picked that morning. Essential to the Japanese table, and almost unknown beyond it.
From an old kimono house to a well-known confectioner, to a quiet tea room. Behind the brightness of the main street, the work and history of craftsmen. A private tea ceremony can be arranged on request — fine matcha, taken with its proper form.
Timed to when the outer market wakes. Dried-goods shops, knife shops, tamagoyaki stalls — the places chefs shop, not the places tourists do. About two hours, breakfast included. Our own office is in this neighbourhood too.
